Mediterranean Veggie Pasta

• Cooking Time : 30 Minutes

• Servings 6

Ingredients:

  • 8 mid size mushrooms halved
  • 1/2 cup of sun dried tomatoes
  • 1/2 cup of olives chopped
  • 1 zucchini
  • 1 cup white wine
  • 2 garlic cloves
  • 1 cup fresh goat cheese, shredded
  • 1 lb spaghetti
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon salt
  • 1/2 tablespoon pepper

Mediterranean Veggie Pasta

Directions:

1. Sauté the mushrooms, olives, sundried tomatoes, garlic and zucchini on that order with little olive oil.

2. Add  1 cup white wine to deglaze the pan and let it reduce.

3. Boil pasta until “al dente”.

4. Mix  vegetables, and sauce.

5. Drizzle  olive oil on top and the goat cheese.
